Ingredients:
1 1/2 cups cranberry juice cocktail
1 cup regular vinegar
5 cups sugar
2 (3 oz. each) foil pouches liquid pectin
4 sweet red cubanelle peppers, membranes and seeds removed, chopped very small

Instructions:
  • First step is In a medium-sized saucepan, combine jalapeño peppers, cranberry juice, and vinegar. Bring to a boil, reduce heat, cover, and simmer for 10 minutes.
  • And then, Strain liquid through a wire mesh strainer into a large glass measuring pitcher. Press peppers with the back of a spoon to get all of the juice. Measure 2 cups of liquid and discard pepper pulp.
